Rural Intelligence Food November 10 - 12
Somedays, we feel sorry for aspiring locavores in other parts of the country. The farms in our region make it such a pleasure for chefs to cook with local ingredients, and this Tuesday - Thursday chef Josh Kroner will show how it’s done by offering a four-course prix-fixe Hudson Valley Farmers’ Dinner for $29.95 at his redoubtable Terrapin Restaurant in Rhinebeck. The menu—acorn squash-and-sour apple soup, ricotta-and-beet salad, short ribs, apple cobbler—features ingredients from Migliorelli Farm, Old Chatham Sheepherding Company, and Ronnybrook Farm Dairy. To keep the meal completely local, Terrapin will offer suggested wine pairings from Clinton Vineyards and Millbrook Vineyards & Winery, too.
