RI Selects: Railroad Street Youth Project Dinner

Rural Intelligence FoodNovember 16 @ 5:30 p.m.
High-school age students of the culinary arts, led by six of our region’s most accomplished chefs, including Brian Alberg of the Red Lion Inn, left, will help prepare a special, collaborative dinner to mark the culmination of a 6-week Culinary Arts course offered under the aegis of The Railroad Street Youth Project.  The menu, featuring local produce and artisanal food products in every course, is a knock out:  Following a cocktail reception during which local cheeses and breads will be served, dinner starts with Butternut Squash Bisque with Toasted Pepitas & Truffled High Lawn Cream, then moves onto a Farm Girl Baby Winter Green Risotto with Berkshire Pork Bratwurst, and segues to an Equinox Farm Arugula Salad with Pears, Walnuts, with a Berkshire Blue Cheese & Fig Vinaigrette.  The main course is Braised Pasture-Raised Short Ribs & Poached Turnips.  Dessert is Pumpkin Cheesecake with a Gingerbread Crust served with Ioka Maple Cream.
