This Valentine's Day weekend deepen your knowledge of traditional craft butchery with a hands-on workshop at the Meat Hook on Sunday, February 15, 3-5 pm that guides participants through breaking down a whole hog with practical technique and clear explanation. This two-hour session is designed for both curious home cooks and seasoned culinary enthusiasts who want a grounded understanding of how a whole animal becomes a range of usable cuts. 

Set within the Hudson outpost of the celebrated Brooklyn based butcher shop, the event reflects The Meat Hook’s broader mission to connect eaters with the full cycle of responsible meat production. Since launching its Hudson shop at 322 Warren Street, The Meat Hook has emphasized farm partnerships and traceability, working with local producers like Kinderhook Farm and Gibson Family Farm to showcase how pasture-raised meats can be elevated even further through expert butchery and preperation. 

During the workshop, instructors cover anatomy, cutting strategies, and how classic and lesser-known cuts relate to culinary uses, with opportunities to taste house-made charcuterie and discuss cooking methods that make the most of each portion. Participants will leave with both technique, context and an appreciation for how butchery skills support a more thoughtful and sustainable approach to meat on the plate.
