Welcome fall with this beautiful, delicious and healthy salad featuring hearty curly green kale, vibrant carrots, and everyone’s all-time favorite autumn fruit: apples. They lend a lovely sweetness to the dish, as does the honey in the citrus dressing. This dish tastes best when it has had a chance to sit and absorb the heart-healthy olive oil and flavors; this helps the kale leaves soften so they're easier to eat. Make sure to stir this well and let all of the rich kale ribbons soak up the juices before digging in to autumn-in-a-bowl.

Kale, Carrots and Apple Confetti Salad
Serves 4-6

1 tablespoon shallot, minced
3 tablespoons orange juice
1 tablespoon orange zest
1 teaspoon honey
1 tablespoon mustard, like Dijon
2 tablespoons cider vinegar
3 tablespoons olive oil
Salt
Pepper
1 bunch kale, cut into chiffonade
2 large carrots, peeled and grated
1 large apple, grated

1. In a small mixing bowl, combine shallot, juice, honey, mustard and vinegar. Whisk thoroughly, and slowly add oil.

2. Pour dressing over kale, apples, and carrots. Mix thoroughly. Season to taste with salt and pepper. Allow to sit for 15-20 minutes before serving.
